Year of the Pig

1 oz. Nikka Japanese gin
½ oz. Umeshu plum sake
2 oz. Ceremonial-grade matcha tea
½ oz. Maraschino cherry liqueur
½ oz. Lemongrass ginger syrup
¾ oz. Lemon juice
½ oz. Egg white

Dry shake all ingredients for 20 seconds. Add ice and shake for an additional 20 seconds. Strain into Martini glass and garnish with pig image (with edible paper made from potato and tapioca starches imprinted with an edible ink).
