The bar, already celebrated for its globally-sourced collection of Mexican and Asian spirits, is doubling down on its commitment to showcasing the nuanced characteristics of agave and rice base spirits.
Head Bartender Erika Danielle and her team have meticulously crafted an experience centered around curiosity and education. ‘We want to inspire a genuine interest in the unique flavour profiles of each spirit,’ Danielle explained, highlighting the core principle behind the new format. The menu represents a significant evolution, moving beyond simply serving cocktails to actively engaging guests in the stories and techniques behind each creation.
The new menu boasts a striking array of innovative cocktails. ‘Velvet Blooms,’ a complex blend of shochu, goji, osmanthus, palo cortado Sherry, vermouth, and a selection of bespoke bitters, exemplifies the bar’s ambition. Conversely, ‘Get The MSG?’, a fiery concoction featuring chilli oil-washed Cupreata Mezcal, Szechuan peppercorn tomato cordial, and fresh citrus, offers a bolder, more assertive flavour journey. The ‘Smoking Apple’ showcases a dual mezcal approach, blending The Lost Explorer Tobala Mezcal with Koch Elemental Espadin, complemented by Calvados, apple butter, sweet vermouth, and Peychaud’s Bitters.
Beyond the acclaimed agave selection, Cat Bite Club will further highlight the world of rice spirits. The ‘Ube Noir’ cocktail—rich, creamy, and featuring Luzhao LaJiao Baijiu, Ron Zacapa Rum, black sesame, ube-coconut cream, Amontillado Sherry, and rose water—is a standout. The ‘Straight Outta Scallion’ provides a savoury counterpoint, combining Tumugi koji spirit, black garlic, scallion oil, green walnut, Drambuie, and lime bitters.
To encourage exploration, Cat Bite Club has introduced the ‘Spirits Explorer Passport.’ Guests can log the spirits they sample, tracking their discoveries through the passport’s 50 available slots. Upon completion, patrons will unlock a lifetime benefit: 10% off all spirits.
