Holland America Line is about to elevate the Caribbean cruise experience, launching its new ‘A Taste of the Tropics’ menu across its fleet from October 2025 to April 2026. This isn’t just a menu update; it’s a commitment to delivering an authentic and immersive taste of the islands.
The revamped program, designed to deepen the connection to Caribbean cultures, promises a vibrant array of dishes and cocktails. At the heart of the experience is a dedication to regional specialties, showcased across both the main dining room and the Lido Market buffet.

The menu’s core offerings include hands-on rum tastings, island-inspired cocktails, and robust seafood boils. Guests can indulge in Caribbean nights featuring vibrant dishes like seafood paella and Jamaican patties, alongside fresh ceviche.
The Star of the Show: The Seafood Boil
But the undisputed highlight is the Caribbean chowder appetizer, a creamy coconut-based broth infused with citrus and ginger, followed by a spectacular boil. Servers, decked out in bibs, unveil the pot with a lively song. The blackened snapper alone was a standout, a testament to the commitment to fresh, high-quality seafood – with fish delivered within 48 hours of being caught.
Morimoto’s MDR Delights (Supplement)
Adding to the experience, Chef Morimoto has created three new main dining room dishes, available for a $25 supplement. These include crispy fried whole fresh fish with tamarind chili sauce, yuzu butter grilled lobster, and fresh catch grouper.
A Rum Renaissance
For serious rum enthusiasts, over 35 distinct rums will be available, ranging from iconic cocktails like the Trader Vic’s Mai Tai to unique creations such as the 18th century pirate’s punch (served in a giant shell) and the gin-based green swizzle.
