In late 2018, co-owner and lead distiller Will Robinson was approached by his friend David Thompson with a pitch to open a distillery in Macon, Georgia. Inspired by downtown renaissances in other cities like Portland and Detroit, Thompson wanted to bring the same revitalization to their hometown. After running the numbers, Robinson told his pal he was “absolutely crazy” for building a distillery from scratch.
Despite initial reservations, they agreed to dive into this new venture together. With no experience in the spirits industry but passion for their partnership and Macon’s potential, they began working on creating Longleaf Distilling Co. What makes Macon an ideal location? Thompson and Robinson have both been invested in other industries (construction for David; historic renovation for Will) and learned much about the city’s challenges as well as its possibilities.
“We’ve invested in the fabric of this community,” says Robinson, “and we’re convinced it has true potential. Macon made sense not only geographically but also culturally.” Since construction began, they have used their tasting room both as a gathering space and research/development lab where new ideas are tested.
