Austin-based craft distillery, Still Austin, is once again turning heads with the release of its highly anticipated Tanager bourbon. Launched on December 27, 2025, by Jonah Flicker, this limited-edition blend is designed for the discerning palate and pairs exceptionally well with cigars.
Still Austin has cultivated a strong reputation over the past decade, consistently producing exceptional bourbon and rye whiskey. The distillery’s commitment to quality is evident in its use of heritage grains. Notably, the distillery has consistently incorporated red and blue heirloom corn varietals into its recipes, adding complexity and character to their spirits.
Tanager is a standout creation, meticulously crafted by master blender Nancy Fraley and master distiller John Schrepel. The blend centers around a robust 6-year-old bourbon. The mashbill includes the distillery’s signature red, white, and blue heirloom corn, alongside rye and malted barley. This combination is then treated with the ‘petites eaux’ process – dilution to 50 proof (25% ABV) followed by re-barreling and an additional year of aging. This careful refinement is intended to unlock ‘caramelized wood sugars and length to the palate’ – a key characteristic of Still Austin’s offerings.
On the nose, Tanager reveals notes of cherries jubilee, decadent butterscotch, and the inviting aroma of roasted applewood. The palate follows with a subtle warmth from white pepper, complemented by the rich sweetness of fresh pecan. The finish is a complex tapestry of marjoram, pink peppercorn, and black cardamom, lingering long after the last sip.
Tanager is presented in a specially designed box, featuring artwork by Marc Burkhardt and a sturdy metal stopper. The bottle retails for $150 and is available at the Still Austin distillery and select specialty retailers nationwide, including ReserveBar.
