The Full Story
Derek Krogstad, founder and owner of Rosewild, has long been fascinated by the culinary traditions of Scandinavia. “We wanted to create an immersive experience that transports our guests to the fjords and forests of Norway,” he explains. Tom Knowlton’s Drekker Brewing was an obvious choice as a partner for this endeavor. As head brewer at Drekker, Tom has developed a reputation for creating innovative beers that are both bold and nuanced.
The menu for this Nordic-themed beer dinner features dishes such as citrus-cured salmon with kölsch to lingonberry mousse and lefse almond cake paired with Content Destroyer. Each course is designed to highlight the unique flavor profiles of Drekker’s craft beers, while providing a glimpse into the rich cultural heritage of Norway.
