Overview: In a bid to revitalize the amaro category for American palates, Seth Watson, founder of Distillery of Modern Art in Atlanta, has created an amaro designed specifically with Southern tastes in mind. Dubbed Amaro Peach, this spirit combines locally sourced peaches with complex aromatics and just the right amount of sweetness.
The Full Story
Watson’s inspiration for Amaro Peach stemmed from his European travels, where he was struck by the diversity of amari available in every city and town. Recognizing that this niche market had yet to be tapped in America, Watson sought to create a distinctly Southern take on the classic Italian digestif.
The result is an amaro that perfectly balances bitter and sweet flavors. “We wanted to create an amaro with a sweetness to it,” explains Watson, “with the goal of balancing bitter and sweet.” And so, he turned his attention to Georgia’s beloved peaches – locally sourced from farms in neighboring states as well.
Production & Profile
The production process for Amaro Peach is meticulous. Fresh peaches are carefully selected and processed into a puree before being combined with an array of complex aromatics, including gentian root, wormwood, cinchona bark, angelica root, dried sweet and bitter orange peels, cardamom, sasparilla for the bite (cassillabark), horse root (vanilla), rosemary (lemon), cinnamon (fennel). Muscovado sugar is then added to enhance the natural sweetness of the peaches.
The result is a bold and full-bodied amaro with a dark golden hue. Watson recommends sipping Amaro Peach slightly chilled, either on its own or paired with citrus – “a little squeeze of lemon or lime will do the trick.” When it comes to mixing cocktails, Amaro Peach pairs beautifully in classic Black Manhattans.
